I stuck a potato in water and now I don’t know what to do

So I put this potato in water a few weeks ago and now I have this beautiful monstrosity. How do I plant it for more potatoes? Can I just plant the whole thing? Do I need to trim the roots? Should I cut out each vine and plant that?
Any help would be appreciated!
